How natural processing shapes the cup
Natural Process describes what happens to the coffee fruit after harvest. The whole coffee cherry dries before the dried fruit is removed and the seed is milled. The method can contribute fruit-like aromas, perceived sweetness, and body, but the result also depends on the coffee, drying, roasting, and brewing.

What happens during natural processing?
- 1. Harvest the cherriesThe coffee seed begins inside a fruit commonly called a coffee cherry.
- 2. Dry the whole fruitCherries dry with the fruit surrounding the seed. Drying conditions and handling matter for consistency.
- 3. Remove the dried fruitAfter drying, the outer layers are removed and the green coffee is prepared for roasting.
Natural, or dry, processing differs from washed processing, where the outer fruit is removed before drying. Neither method guarantees one flavor: variety, growing conditions, handling, roast, and brew all contribute to the final cup.
Why can it taste fruit-forward?
Drying with the fruit intact can influence the coffee’s aroma and flavor development. Tasters may describe a natural coffee as fruit-forward, aromatic, sweet, or full-bodied. Those are tasting descriptions, not a promise that every natural coffee will taste the same.
